Som kökschef hos oss kliver du in i en nyrenoverad restaurang med stort fokus på smaker och upplevelsen. Du får möjligheten att jobba vidare med vårt menykoncept och med det sätta din touch på betydelsen av god mat, väl matchad till vår öl och dess unika smaker.
Erfarenhet och kunskaper:
Som kökschef har du ansvar för den dagliga driften i restaurangen vilket inkluderar det kompletta ansvaret för köket och maten, samt budget, planering, inköp och leverantörskontrakt. Du har även personalansvar för två personer i köket och förväntas samarbeta mycket väl med övrig restaurangpersonal som rapporterar till restaurangchefen. Vi ser därför att rätt person har mycket god ledarerfarenhet samt stark förståelse för businessen bakom framdriften av ett restaurangkök.
Du behöver även kunna uppvisa goda erfarenheter och meriter av att:
· Utveckla menyer, smaker och tilllhörande prissättning
· Upprätthållande av hygieniska krav och regelverk för livsmedelshantering och matberedning
· Schemaläggning, rekrytering och personlig utveckling av kökspersonal
· Utveckling av anpassade menyer för event och trendspaning inom restaurangbranschen
· Identifiering av nya kulinariska tekniker och presentationer

Vi ser att du kommer arbeta nära vår ölprovningsansvarig/sommelier för att fortsätta utveckla våra besökares smakupplevelser och vi tror att rätt person uppskattar den sociala kontakten med gästerna likväl som framdriften av köket och utvecklingen av en framgångsrik meny.
Som person ser vi att du är strukturerad och planeringsam och trivs såväl med det operationella ansvaret som med det administrativa arbetet. Du är lösningsorienterad och en god lagspelarare med hög servicekänsla för såväl restaurangens gäster som dina lagkamrater.

The Hospitality & Marketing manager acts as the onsite manager for three people including: the restaurant head chef, tasting-specialist and restaurant front of house manager.
We are looking for a person with a bachelor degree in marketing or business, with an interest for the beverage industry and that has proven experience within the field to take on responsibilities such as:

Your role is based on leading and optimizing the integrated brewing and packaging process. You will actively work with all aspects of the brewery and packaging site via an experienced team of brewers and operators. You will ensure high level of quality and will have the overall responsibility a flow of new initiatives in line with business strategies and plans.
Your role will involve many different tasks including some hands-on production (from brewhouse through to packaging), supporting recipe creation, part of making purchasing decisions and generally ensuring smooth operation of the brewery and the packaging site. You will be handling a high-level complexity as we are extending our portfolio of both 1PP and 2PP products. You will be instrumental in integrating new business as well handling all stakeholders internally and externally. You will need to be experienced in working in a commercial scale brewery and have good knowledge of all brewhouse, fermentation, maturation, process and packaging operations. You are highly motivated and will contribute to our desire for continuous improvement both in terms of quality and best working practices. You will also be involved with creative decisions regarding which styles of beer to produce and recipe design. You are team-focused and is able to maintain trusting, professional relationships with your colleagues.
Your day-today tasks will include;
o Lead all budgeting and financial processes for the production
o Align total production from brew to packaged goods
o Manage daily production administration.

o Lead business systems optimization and cost efficiency

Job Requirements;
- You have a recognized diploma qualification in brewery operations or alternatively a degree in biology, microbiology, chemistry, chemical engineering, food science or food technology
- You have at least 5 years experience of a leading role in a commercial brewery (preferably automated to some degree)
- You have a proven record in building strong teams
-You have strong analytical skills that will guide you in optimizing cost and production efficiency in the whole chain of production
-You have good communication skills and has a proven record of navigating in and building your cases in larger organizations.
- You have proven ability to turn product innovations into strong business opportunities
The Brewery:
Nya Carnegiebryggeriet (NCB) is a craft brewery situated in Hammarby Sjöstad, Stockholm. Founded as a collaboration between The Brooklyn Brewery and Carlsberg, production started in 2014 and volumes have risen steadily. Since October 2020 we have added a filling and packaging site close to the brewery. NCB is part of a wider group of craft breweries which are affiliated to both The Brooklyn Brewery and the Carlsberg group.
